The Tokushu Knife Take: Judge the Finished Knife
Steel matters, but it does not determine a knife's performance by itself. Heat treatment, blade geometry, grind, thickness behind the edge, and intended use all affect how a finished knife cuts, sharpens, and holds its edge. Use each product page for the model's stated steel and specifications.
What Takefu's Official SPG2 Data Supports
Takefu describes a process that atomizes refined molten steel into rapidly solidified powder, then uses compacting, sintering, forging, and rolling. Compared with conventional remelted steel, Takefu says this process produces blade steel without segregation and with a uniform, fine structure.
- Balanced blade properties: Takefu lists high hardness, toughness, abrasion resistance, and corrosion resistance as SPG2's four principal blade properties.
- Hardness in context: Takefu publishes a quench-hardness value of HRC 62 or higher for the steel grade. The final hardness of a finished knife depends on its maker's heat treatment, so Tokushu Knife does not apply one hardness number to every SG2 or R2 knife.
- Stainless care: Takefu describes SPG2 as corrosion-resistant. Corrosion-resistant does not mean corrosion-proof; hand wash, dry promptly, and avoid dishwashers.
Are SG2 and R2 the Same Steel?
SG2 and R2 are often grouped together in Japanese-knife retail, which is why both labels appear in this collection. The primary Takefu source cited here documents SPG2; it does not establish that every knife sold as R2 is chemically identical to SPG2. We therefore preserve the steel designation supplied for each model instead of claiming universal equivalence or identical performance.
