Shibata-san's unique design philosophy is the driving force behind this exceptional knife, which is made using R-2 powdered stainless steel alloy for the jigane (inner layer), coated with a hagane (outer layer) of softer stainless steel, and then finished with a hand-executed rough finish that aids in food release.

Inspired by a combination of a gyuto and a nakiri, this knife boasts a slight curve that strikes the perfect balance between reducing friction and ensuring optimal food contact. Finger room is a good thing!

This essentially functions like a tall petty. Most petty knives don't leave much room for fingers under the handle but this knife, being a bit higher, saves your knuckles. It's also ridiculously sharp. So sharp that when I go to slice garlic, the garlic starts shaking.
