Introducing the Shibata Koutetsu 135mm Ko-Bunka Kitchen Knife, a masterpiece by legendary blade smith and sharpener, Takayuki Shibata. Finger room is a good thing!

This essentially functions like a tall petty. Most petty knives don't leave much room for fingers under the handle but this knife, being a bit higher, saves your knuckles. It's also ridiculously sharp. So sharp that when I go to slice garlic, the garlic starts shaking.
