Takamura SG2 Migaki Gyuto 180mm: The Precision Laser
The Takamura Migaki SG2 Gyuto 180mm is a masterclass in Japanese blacksmithing. Forged by the legendary Takamura Hamono in Echizen, Japan, this knife is world-renowned for its "laser" geometry—an ultra-thin grind that allows the blade to glide through dense vegetables and proteins with zero resistance.
Why Choose the 180mm Gyuto?
While the 210mm is the industry standard, the 180mm Gyuto is the preferred choice for chefs in tight prep spaces and home cooks who want the versatility of a Japanese chef knife with the nimbleness of a petty. It offers the perfect balance of height for board clearance and a shorter length for extreme control during detail work.
High-Performance SG2 (R2) Powdered Steel
At the heart of this Takamura Gyuto is SG2 powdered metallurgy steel (also known as R2 steel). This "super steel" is celebrated for its incredible edge retention and ability to take a screaming-sharp 50/50 double-bevel edge. Encased in stainless cladding with a shimmering migaki (hairline) finish, this knife offers professional-grade performance with minimal maintenance.
