Overview
Forged by Nigara Hamono in Hirosaki, Aomori, this 300 mm sakimaru-tip Sujihiki pairs a razor-hard SG2 powder-steel core with rugged kurouchi tsuchime stainless cladding. The long, slender blade glides through brisket, roasts, and sashimi in a single pull, while the full-tang Western handle—custom-fitted with shimmering abalone resin scales and a nickel-silver bolster—adds stability and show-stopping style at the carving station.
Common Questions
Q: Is this knife good for home cooks who only carve occasionally?
A: Absolutely. The 300 mm length lets you slice holiday roasts or smoked brisket cleanly in one stroke, and the stainless cladding means less fuss than carbon steel. Store it dry and hone lightly before big meals.
Q: Does SG2 need special care?
A: SG2 is stain-resistant and holds an edge for months of typical use. Hand-wash, dry promptly, and strop on leather every few weeks; full sharpening is rarely needed.
Q: How does the abalone handle hold up?
A: The resin-stabilized abalone scales are waterproof and shrink-proof. Mild dish soap and a soft cloth keep the inlay bright.
