Kurosaki Senko SG2 Gyuto 270mm

Discover the artistry and performance of the Kurosaki Senko SG2 Gyuto 270mm, crafted by renowned blacksmith Yu Kurosaki. Beginning his career under the guidance of Hiroshi Kato at Kanehiro Uchi Hamono, Kurosaki has elevated his craft with each new knife series, and the Senko is no exception. This knife exemplifies his dedication to innovation and aesthetic appeal.

With a core of premium SG2 powdered stainless steel—a choice renowned for both edge retention and durability—this gyuto is designed for precision and longevity. The blade is san-mai constructed, with SG2 as the central core steel, encased in a layer of stainless cladding. Hardened to approximately 62 HRC, this edge is primed for a sharp, resilient cut that stands up to frequent use without compromising sharpness.

The Senko’s striking hammered pattern is a defining feature, with miniature triangular marks polished to create a unique reflective quality that catches light in a captivating way. Not only does this textured surface enhance the blade’s beauty, but it also assists with food release, making it as functional as it is visually appealing.

In terms of geometry, this 270mm gyuto offers a blade height of just over 51mm, providing ample knuckle clearance and ideal balance for slicing, chopping, and rocking motions. The first portion of the edge has a flat profile, transitioning into a slight curve toward the tip, allowing for versatile cutting techniques. At 7.3 ounces, this gyuto is lighter than most 270mm knives, making it highly maneuverable and well-suited for extended prep sessions.

As with all Kurosaki creations, this knife features exceptional fit and finish. From the super-fine tip to the carefully polished rosewood handle, the Senko SG2 Gyuto is a masterpiece designed to deliver peak performance. It’s an elegant addition for anyone looking for a high-performing, beautifully crafted knife that embodies the spirit of Japanese craftsmanship.

This thing kicks ass

I am a sous chef and I have been using this knife for larger scale prep projects. It has been with me about a month now and is still as sharp as the day I got it. Fit and finish are top notch. It’s very thin behind the edge and thin at the spine, but still feels sturdy when you hold it. I like the added length and weight of the 270mm but this knife is also very nimble for its size.
