      Unlike Gyuto knives, Kiritsuke blades have less curvature, making them less suited for rock-chopping but excellent for push cuts and pull cuts. Some designs feature a profile similar to a single-bevel Kiritsuke, while others resemble a tall Nakiri with a clipped point or a hybrid Gyuto-Kiritsuke fusion.
