Shibata Koutetsu 195 mm

Wow, what a laser and it is now the thinnest blade I own and perhaps even the sharpest, though my three Denka series blades and my Shigefusa give it a run for its money. I would add that the Shibata is delicate and if you're not used to using super-thin blades, this may not be the best choice. With that said, if you're cutting mostly veggies and/or boneless meats, it's a wonderful choice; moreover, it's downright cheap for the sheer performance that it delivers. I'm very pleased I bought it.
