Overview

Meet the Shibata Koutetsu 195 mm Battleship Gyuto is a laser-thin R-2 powder-steel chef’s knife inspired by the bow of Japan’s first ironclad warship. Master sharpener Takayuki Shibata forges each blade in a stainless san-mai construction, then finishes it with his signature hair-line migaki polish and hand-engraved kanji. A subtle belly along the edge glides through rocking cuts, while the reverse-tanto “battleship” tip excels at intricate work. This version ships ready to roll with a lightweight octagonal rosewood wa handle that balances the blade perfectly for all-day prep.

Q: Is a 195 mm gyuto long enough for professional prep?

A: Absolutely. The shorter length improves agility on crowded boards while still providing enough edge for full-sized vegetables and proteins. Many line cooks prefer this size for all-day service.

Q: Do I need special care for R-2 powder steel?

A: R-2/SG2 is fully stainless, so regular rinsing and towel-drying are all you need. Hone lightly on ceramic and strop as required to keep the factory laser edge screaming sharp.

Shibata Koutetsu 195 mm

Wow, what a laser and it is now the thinnest blade I own and perhaps even the sharpest, though my three Denka series blades and my Shigefusa give it a run for its money. I would add that the Shibata is delicate and if you're not used to using super-thin blades, this may not be the best choice. With that said, if you're cutting mostly veggies and/or boneless meats, it's a wonderful choice; moreover, it's downright cheap for the sheer performance that it delivers. I'm very pleased I bought it.
