Overview
Hatsukokoro’s Ryuhyo (“drift ice”) SG2 Damascus Gyuto 240 mm fuses a laser-thin 244 mm edge of SG2 powdered stainless steel with a shimmering suminagashi pattern that mirrors floating sea ice. Weighing just 185 g and measuring 1.9 mm at the heel, it feels feather-light yet delivers SG2’s renowned edge retention and corrosion resistance. An octagonal olivewood wa handle balances the blade just forward of the heel for nimble, low-fatigue control during marathon prep sessions.
Common Questions
Q: Is a 240 mm gyuto too large for home kitchens?
A: Thanks to its ultra-thin grind and sub-200 g weight, it handles like a shorter knife while offering the extra reach pros swear by for large produce and protein breakdown.
Q: How do I care for SG2 Damascus steel?
A: SG2 is stainless, so rinse and dry after use, avoid hard surfaces, and hone or strop regularly. Occasional whetstone sessions (1 k–6 k grit) will keep the edge screaming-sharp.
Q: What cutting tasks does the Ryuhyo excel at?
A: Its thin geometry breezes through onions, carrots, and ultra-precise fish work, while the 53 mm heel height gives ample knuckle clearance for rock-chopping herbs.

I've made my fair share of purchases online and I bought a bunch of knives from these guys. Even though it was online and at first i wasn't sure if that's the way to go with buying my first Japanese knife and knives they answered every question i had and were really helpful. The knives are a thing of beauty and sharp straight from the box. Highly recommended!
It was a great experience working with Tony and his crew at Tokoshu Knife. The knife is stunning and is a great performer.
Great knife if you like light weight and thin. Love the length. Feels well balanced. Great purchase!
