Tsunehisa SRS13 Polished 210mm Kiritsuke Gyuto Black Pakka Western Handle
Introducing the Kiritsuke Gyuto - a blade that truly excites knife enthusiasts with its slim and purposeful profile. Typically, kiritsuke knives are single bevel designs that are reserved for only the most skilled chefs in Japanese restaurants. However, this double bevel version offers a more versatile option with its slightly flatter profile and fine tip that's perfect for intricate detail work.
Crafted from SRS13 Powdered Metallurgical stainless steel, this knife boasts a durability that's second to none. With high wear resistance and the ability to take a very acute edge, this advanced alloy is heat treated to 62+- Rockwell, ensuring a long-lasting performance that won't disappoint.
The Kiritsuke Gyuto's construction, fit and finish are of a high standard, especially given its mid-price point. The finely finished Western-style black pakka wood handle, stainless steel bolster, and three stainless pins provide a comfortable and sturdy grip that's perfect for any kitchen task.
With its premium quality and expert craftsmanship, the Kiritsuke Gyuto is a highly recommended addition to any knife collection.
This is an excellent options for the professional kitchen, SRS13 is like a tougher version of SG2 Steel, and this workhorse is ready to party 8 hours a day. We recommend a loaded strop to bring back the edge after long work sessions. We have had a very busy chef use this all day everyday for 3 months before requiring re-sharpening.
