Honestly I gotta say I’m extremely impressed.
This Kiritsuke is bad ass.
I did a forced patina after about 3 weeks with instant coffee and got extremely close to the look and protection I wanted.
The blade is great retains an edge and it’s super light weight which is weird at first but is a blessing.
It’s also worth noting that the edge angle is super fine and might take you a try or two to get that perfect angle again. I wound up bringing it up to about 20 ish for the bevel and then dropping it back down to the 8 or 12 mark.
As I said the blade is thin, you need to listen to the instructions that come with the knife. Obviously with a thinner blade you get extremely precise cuts but don’t go for bone etc etc.
Honeing wise for an average of my 12-14 hour days where I spend a total of 3 hours cook time and the remained food preping I’d hone maybe 4 times total depending on what I’m cutting.
I’m not supported by them but if any of y’all need a new knife for home or work it’s worth it.
I can’t even cover a 30 min bar tab with 65…

Love that i can get a longer kiritsuke. And I definitely appreciate the sharpening as the other Dao vua ive gotten always need to be sharpened. It performs pretty well. If youre seasoned then you might be impatient with this but for entry level and mid level, its a great price and size. As much as i love it though this has to be my last purchase thats not the special editions, because those are thinner and just perform better
Great knife. No complaints
I have been wanting a high quality Japanese kiritsuke knife. I spent an extensive amount of time researching and looking at various Japanese handmade brands. I did not want to spend a premium price unless I could actually hold and feel the knife but where I live that is not an option and as much as I want to visit Japan that was not an option either. I watched YouTube videos and read countless reviews trying to decide. There are many great options that is overwhelming to decide just based upon that information. I then came on this Tokushu Knife website. I was surprised by the options and pricing. Once there I saw the Dao Vua brand and after researching this brand I decided to buy this Kiritsuke and a Kiri Cleaver. Both very reasonably priced and while not Japanese handmade, instead Vietnamese handmade, I was intrigued by what I saw and other reviews.
The first time I held and used the kiritsuke I knew it was exactly what I had wanted. I had specifically wanted one at 240 MM. It is amazingly well made, feels great in my hand and loved the overall look and design. I would definitely recommend this knife and brand. I am planning to purchase a Dao Vua Gyuto in the future to add to my new collection. Delivery was very quick and I opted for the sharpening service which delayed shipping a relatively short time.

Received my knife really quick. Have been wanting to try out some sharpen, heard that this was a friendly knife to start out on sharpening, and with the great price, I couldn’t my say no to this. Heard some ppl saying that have issues with DaoVua knife, but I am happy with what I received. OOTB sharpness was not too bad, good for me cause I will be practicing on sharpening. Love the length👍🏼
