first japanese knife

this kiritsuke looks straight up awesome, and the cutting feel is just totally different from any of the other western style knives i'm used to. the spine is a little thicker than i expected but the thinness behind the edge negates that for cuts that dont go up to the spine. its not a laser beam per se on some of the harder ingredients (like a pumpkin if its a thick cut) but its still in a different league next to the western style knives (cutco, victorinox, etc). food release is pretty good from the times i have used it. factory microbevel is a bit uneven but thats just me being nitpicky, its the only thing i could really call out on this knife, and while extremely sharp from the factory it still has room for improvement with a little whetstone action. after a quick touch up it will whittle hair and fly through ingredients and make cooking feel next level badass, even if you're not that good at it. patinas pretty quick being aogami super and all but nothing too crazy, just a little bluish mark where the core is exposed but that comes with the steel type. over all i am very happy with the knife and it suits my needs well and puts a smile on my face whenever i use it.
