Overview
This one-of-one Yoshimi Kato SG-STRIX V-Tsuchime Kiritsuke Sujihiki 270mm pairs a long Japanese slicing blade with a custom Prisma wa handle by Cafer Ayan. The pictured knife is the exact knife offered: vivid orange wood meets smoky translucent resin, a red marbled ferrule and a narrow gold-colored accent.
The 270mm blade is designed for long, controlled slicing strokes through boneless meat and fish. Its narrow profile and pointed kiritsuke tip suit portioning steaks, carving roasts and preparing clean fish slices. Rows of V-shaped hammer marks catch the light above the blade's wavy cladding line.
SG-STRIX, also called SPG STRIX, is a stainless powder steel developed by Takefu Special Steel. Takefu designed it to combine high hardness with easier sharpening than conventional high-hardness powder steels. The custom handle gives this finished knife its individual appearance; it is included and already fitted.

Will I receive the knife shown in the photos?
Yes. This is a one-of-one finished knife with the pictured Prisma handle. The orange wood figure, smoky resin and red marbled details belong to this individual piece.
What is a kiritsuke sujihiki used for?
It is a dedicated slicing knife for boneless meat and fish. The long blade helps you complete a slice in fewer strokes, while the pointed tip is useful for precise starts and trimming. Use a gyuto or another suitable knife for general chopping; this slicer is not intended for bones, frozen food or prying.
How do I care for SG-STRIX and the custom handle?
Hand wash and dry the blade and handle promptly. Stainless steel resists corrosion but still needs care, and the wood-and-resin handle should never be soaked or put in a dishwasher. Use a knife-friendly cutting board and a correctly fitted blade guard for storage. Maintain the edge with whetstones and gentle passes on a Tokushu Knife leather strop when appropriate.
