Overview
The Yu Kurosaki Gekko VG-XEOS Gyuto 240mm (No Handle) is a bare blade from one of Echizen’s most sought-after smiths, designed for cooks and makers who want Kurosaki performance with a fully custom handle. Forged in Takefu Knife Village, the Gekko (“moonlight”) line pairs a super-refined gyuto profile with a highly polished migaki finish that catches light like a calm night sky.
At its core is VG-XEOS, a next-generation stainless steel from Takefu Special Steel. Hardened to roughly 61–62 HRC and clad in softer stainless, it delivers excellent edge retention, high corrosion resistance, and a fine, crisp edge that still feels surprisingly tough in daily use. In a 240mm gyuto format, you get generous blade height for knuckle clearance, a thin spine around 2mm at the heel, and a grind that feels very close to “laser” while maintaining enough meat in the spine for confidence on denser prep.
This Tokushu Knife exclusive configuration is sold without a handle. The wa-style hidden tang arrives clean and ready for a custom handle install, letting you choose your preferred wood, ferrule material, and final balance point. It’s ideal for handle makers, modders, and collectors who want a true Kurosaki Gekko as the heart of a one-of-a-kind build.
Once handled, this 240mm gyuto covers nearly every board task: push-cut mountains of veg, rock over herbs, portion proteins, and glide through fine slicing. The slightly lowered blade line and tall heel provide comfortable knuckle clearance and a very intuitive cutting feel for both professional kitchens and serious home cooks.
Common Questions
Q: Is this blade suitable for home cooks, or only for makers and pros?
A: The steel and grind are absolutely pro-level, but once a handle is installed this can be an outstanding “one-knife-does-it-all” gyuto for serious home cooks too. The main difference is that it arrives as a blade-only project piece. If you don’t install handles yourself, you can have a custom handle made for you so it arrives ready to work, but with a fully bespoke look.
Q: What’s special about VG-XEOS compared to other Japanese stainless steels?
A: VG-XEOS is a high-end stainless formulated for cutting tools: it reaches around 61–62 HRC, takes a very refined edge, and hangs onto that sharpness noticeably longer than typical German-style stainless. Day to day, you’ll notice fewer trips to the stone, very good stain resistance, and a crisp, clean bite on product that suits fine brunoise and protein prep alike. Compared with many powdered steels, it offers a great balance of edge life, toughness, and ease of sharpening—ideal for a hard-working gyuto.
Q: How should I care for a high-end VG-XEOS blade like this?
A: Treat it like any premium Japanese stainless gyuto: use a soft, knife-friendly board (we strongly recommend pairing it with a Hasegawa Pro Cutting Board), avoid bones and frozen food, hand-wash only, and dry immediately. While VG-XEOS is fully stainless, a light coat of tsubaki (camellia) blade oil is a great way to protect the edge between shifts or services. When performance starts to fade, refresh the edge on quality water stones or send it through Tokushu Knife’s sharpening service for a professional tune-up.
Q: How often will I need to sharpen, and should I strop this knife?
A: In a busy pro kitchen using proper technique and a good board, many cooks can go weeks between full sharpenings on VG-XEOS; in home use, that can stretch to months. Between stone sessions, a few light passes on a quality leather strop keeps the edge feeling fresh and crisp. We recommend something like the Tokushu Knife Premium XL Buffalo Leather Strop to maintain that Kurosaki razor feel with minimal steel removal.
