Tsunehisa Aogami Super knives combine long-lasting carbon-steel performance with the practical value and variety for which Tsunehisa is known. Aogami Super—also called Blue Super or AS—is a high-carbon Japanese cutlery steel capable of taking a very keen edge and holding it through demanding prep work.

Many knives in this collection use an Aogami Super core with stainless cladding. The cladding protects most of the blade from corrosion while leaving the exposed core steel at the edge responsive to sharpening and capable of developing a natural patina.

Why choose Tsunehisa Aogami Super?

  • Excellent edge retention: A strong choice for frequent cooks who want fewer touch-ups between sharpening sessions.
  • Keen cutting edge: Aogami Super can take a refined, aggressive edge suited to precise kitchen work.
  • Practical stainless cladding: On stainless-clad models, only the exposed carbon core requires careful drying.
  • Multiple profiles: Choose from gyuto, bunka, santoku, nakiri, kiritsuke, petty, and sujihiki shapes.
  • Handle flexibility: Depending on the model, select an installed wa handle or a blade-only option for a custom build.

Kurouchi, tsuchime, and migaki finishes

Kurouchi models retain a dark forge-scale appearance and offer a traditional, rustic character. Tsuchime blades add a hammered texture, while migaki models use a cleaner polished finish. The finish affects appearance and surface texture, but the underlying geometry, heat treatment, and intended use remain the most important performance factors.

Choosing your blade shape

A gyuto is the most versatile all-purpose option. A santoku or bunka offers a shorter, nimble profile for everyday prep, while a nakiri excels at vegetables. Petty knives handle small ingredients and detail work; sujihiki knives provide the length needed for clean slicing cuts.

Caring for Aogami Super steel

Wash the knife by hand, wipe it dry promptly, and never leave it wet or place it in a dishwasher. A patina on the exposed carbon edge is normal and can help protect the steel. Avoid bones, frozen food, twisting cuts, and hard impacts that can chip a thin Japanese edge.
