Tsunehisa Aogami Super Kurouchi Tsuchime Gyuto 240mm
The Tsunehisa Aogami Super Kurouchi Tsuchime Gyuto 240mm is a masterclass in balancing traditional Japanese forging with modern kitchen utility. This oversized chef’s knife is designed for those who demand the extreme performance of high-carbon steel without the high-maintenance burden of a fully reactive blade.
Forged under the direction of the legendary knife expert Shibata Takayuki, Tsunehisa knives are celebrated for their incredible out-of-the-box sharpness, consistent edge geometry, and artisanal aesthetics.
Key Features & Performance
- Aogami Super (AS) Core: The gold standard of Japanese carbon steel, offering a high Rockwell hardness of 63-64 HRC for unmatched edge retention and a silky-smooth cutting feel.
- Stainless Steel Cladding: The reactive carbon core is sandwiched between layers of stainless steel (San Mai). This protects the blade from rust while allowing the high-performance edge to shine.
- Kurouchi Tsuchime Finish: The rustic "Blacksmith" (Kurouchi) finish and "Hammered" (Tsuchime) texture create air pockets that reduce food drag and improve release during heavy prep.
- Versatile 240mm Profile: This Gyuto provides the "runway" needed for long, clean slices of protein while maintaining a nimble tip for fine dicing and detail work.

Pro-Level Maintenance
To preserve the integrity of the high-carbon edge and the Morado wood handle, we recommend the following care routine:
- Surface Protection: Always use a soft cutting surface like the Hasegawa cutting board to prevent edge chipping and prolong sharpness.
- Honing: Maintain the razor-sharp finish between professional sharpenings with a premium leather strop.
- Dry Immediately: While the sides are stainless, the exposed Aogami Super edge is reactive. Wipe the blade dry immediately after use to prevent corrosion or rust.
