No. The outer cladding is stainless, but the exposed White #2 cutting edge is carbon steel. That edge can develop a patina and will rust if left wet. Wipe it during prep and hand-wash and dry the knife immediately after use.
Is a 240mm gyuto suitable for a home kitchen?
Yes, if you have enough cutting-board space and prefer a longer chef knife. Its reach helps with large produce and longer slices. A smaller knife can feel more manageable on a compact board.
