The Shibata Koutetsu Aogami Super (AS) Migaki Gyuto 240mm is a true laser: ultra-thin grind, screaming sharp, and crafted for effortless push cuts and precise tip work. It pairs an Aogami Super carbon steel core with stainless cladding in a clean migaki (satin) finish, delivering long edge life with simple day-to-day care. Typical hardness lands around 62–64 HRC, and batches ship with lightweight octagonal wa handles (rosewood or jarrah, depending on run). If you want a 240 that flies through prep yet stays easy to maintain, this is it.
Geometry is thin at the spine and even thinner at the tip for low wedging in dense produce. Expect classic Koutetsu laser feel with excellent balance and a comfortable, rounded spine/choil. Many runs list sub-2.5 mm spines at the heel and ~1.6–2.0 mm near the tip, keeping weight in the mid-170s to high-180s grams—nimble without feeling fragile.

Q: Is this knife suitable for home cooks?
A: Absolutely. The Koutetsu AS is thin, sharp, and easy to control, so it rewards good technique right away. Just avoid bones/frozen foods and dry it after washing—AS core is carbon steel while the cladding is stainless.
Q: How reactive is Aogami Super?
A: Only the exposed edge will patina (that’s normal and protective). Wipe dry when not in your hand, after use dry thoroughly, and apply a light coat of tsubaki oil if you’ll store it for a while.
Q: Koutetsu AS vs. Koutetsu R2/SG2—what’s the difference?
A: Geometry is similarly laser-thin. AS (carbon) takes a biting edge quickly and patinas; R2/SG2 (stainless) is fully stainless with superb wear resistance. Choose AS for max bite and easy touch-ups; R2/SG2 for zero rust anxiety.
