The Shibata Koutetsu Aogami Super (AS) Migaki Gyuto 210mm is a classic “laser” built for precision and speed. An Aogami Super carbon steel core (tempered ~62–63 HRC) is clad in stainless steel and finished in a clean migaki (satin), so you get long edge life with simple day-to-day care. The grind is extremely thin with a fine, agile tip, and the spine/choil are rounded for all-day comfort. Typical runs ship with a lightweight octagonal wa handle in rosewood (some batches appear in jarrah).

Q: Is this 210mm gyuto good for home cooks?
A: Absolutely. It’s thin, light, and incredibly sharp out of the box, which makes prep faster and more precise. Just avoid bones/frozen foods and dry it after washing—the AS edge is carbon steel (it will patina), while the cladding is stainless.
Q: Will a “laser” feel fragile?
A: It’s purpose-built for fine slicing and push cuts through produce and proteins (off the bone). Use a soft board (like Hasegawa) and let the edge do the work—no twisting or prying. Treat it right and it’ll be a dependable daily driver.
Q: How do I maintain the edge?
