Overview
The Shibata Arare SG2 Gyuto 210mm is an everyday Japanese chef knife with a distinctive geometric hammered finish and a carbon fiber handle. Its SG2 powdered stainless steel core is clad in stainless steel, combining edge retention with straightforward daily care. The 210mm blade gives you room for slicing vegetables, portioning boneless meat and preparing fish without moving up to a longer chef knife.
The Arare pattern covers the upper blade with small, angular impressions that contrast with the smooth cutting face below. This configuration comes fitted with the pictured black and grey carbon fiber octagonal wa handle and a narrow gold-colored accent spacer. Each handle has its own pattern, so appearance varies slightly between knives.
Common Questions
Is a 210mm gyuto suitable for home cooks?
Yes. It is a versatile size for cooks who want one main knife for vegetables, meat and fish. Use a relaxed pinch grip and controlled slicing or push cuts. The fine edge is designed for clean cutting, so avoid twisting it through food or using it to pry.
Is the Shibata Arare stainless?
Yes. It has an SG2 stainless steel core and stainless cladding. Hand wash after use and dry both blade and handle promptly. Do not leave it soaking or put it in a dishwasher; stainless steel can still stain or corrode if neglected.
How should I maintain the edge, and can I choose a Prisma handle?
Use whetstones for sharpening and a Tokushu Knife leather strop with light pressure for routine edge maintenance. Cut on wood or a knife-friendly synthetic surface, such as a Hasegawa cutting board. Avoid bones, frozen food, hard pits and glass boards, and protect the clean, dry edge with a fitted blade guard. The listed price includes the carbon fiber handle shown; contact us before ordering a Prisma handle upgrade so we can confirm fit and pricing.
