Overview
The Yu Kurosaki Gekko VG-XEOS Gyuto 210mm (No Handle) is a stainless, laser-thin performer from Echizen—sold as a blade-only so you can install your own wa handle or have us fit one for you. VG-XEOS is one of the newest stainless formulations, heat-treated to the low-60s HRC for outstanding edge retention with easy day-to-day care. The 210mm gyuto profile covers your daily prep—push, pull, glide, and even light rocking—with Kurosaki’s trademark thin grind and smooth food release. If you’re building a custom handle, this is the exact platform enthusiasts love: precise geometry, san-mai stainless cladding, and Kurosaki’s clean, elegant “Gekko” finish.
Common Questions
Q: Is this knife good for home cooks as well as pros?
A: Absolutely. The 210mm gyuto is the most versatile length for home kitchens and line work. It’s light, balanced, and forgiving, with stainless convenience for busy schedules.
Q: What is VG-XEOS and how does it compare to VG-10 or SG2?
A: VG-XEOS is a modern, fully stainless cutlery steel tuned for high hardness with high corrosion resistance. Expect better edge life than VG-10 and easier maintenance than many powder steels, while still taking a crisp, refined edge.
Q: What does “No Handle” mean—can I use it right away?
A: “No Handle” means you’re buying the finished blade with a wa-tang ready for installation. You can fit your own handle or ask Tokushu Knife to install one. Want perfect out-of-box sharpness and tune-up after install? Add our Knife Sharpening Service.
Q: How should I care for it?
A: Hand-wash, dry immediately, and store safely. A few drops of Tsubaki (camellia) oil after long sessions helps protect the blade. Maintain bite with a gentle strop like our Premium XL Buffalo Leather Strop, and use a soft board such as the Hasegawa Pro to maximize edge life.
