SLD, our favourite amongst semi-stainless steels. Ok, there aren't many semi-stainless steels in the Japanese kitchen knife world, but this is still a favourite! Fine grain structure like a high speed powdered metal, good edge retention with a tough edge, and not too difficult to sharpen. It has a very crowd-pleasing migaki finish and with its laser edge and steel toughness thanks to the inherent properties of SLD, this line of knives is highly recommended for line cooks.
Some knife style definitions aren't worth reinventing, and this is the case with the santoku. Santoku translates to knife of three virtues [slice, dice, chop]. Though a santoku is suitable for just about anyone as a very multi-purpose knife, those that like to rock chop or have limited space in the kitchen will particularly enjoy this knife style.
