Tanaka’s forging process is unique, involving the use of pine charcoal during quenching for a gentle, gradual heating effect. He limits his production to just 30 knives daily, ensuring precision and care in each piece. As one of the few Sakai blacksmiths who uses a tempering kiln, Tanaka brings exceptional heat treatment to each blade.
This Gyuto features Tanaka's distinctive wavy cladding line between the hagane (core steel) and jigane (outer layer), exposing more core steel—a hallmark of his style. With its Aogami #1 (Blue #1) core and non-stainless Damascus cladding, this knife is both a high-performance tool and a collector’s piece.
