This knife looks like it’s from a museum!

This is my first carbon steel knife and I’m really happy with it! The clad stamped pattern is really nice (rough yet somewhat glossy). The handle on this knife really stands out though my knife does not have as much contrast between the rosewood and ebony as the ones in the display picture. It also arrives dry so I put some mineral oil on it. This made the colors much deeper but reduced contrast even more. (The photos are without mineral oil)

Great Knife

I have used this knife for over a year. The edge stays sharp and the blade is easy to keep clean. I use a drop of camellia oil on the blade after I wash it. The tsuchime finish does help prevent food sticking to the blade.

Awesome Knife!

The Tokusho White #2 Gyuto is a wonderful knife one that I’m proud to add to my collection. It has a good weight not as heavy as my Hatsukokoro knives but still comfortable in the hand. The edge is sharp right out of the box so I took it through its pace. I wanted to see for its size how would it fare doing intricate work like thinly slicing green onions lengthwise for my ramen and mincing shallots. I worked out flawless! Even for its size I can control the tip of the knife as it cut. After working with it for a while I took it to the strop and did a few passes and the edge was good as new.

Also I want to make a “Shout Out” to Customer Service for all their help.
