Takeshi Saji - A Legend of Takefu Knife Village

The name Takeshi Saji is synonymous with Takefu Knife Village, where he was a founding member alongside other legendary figures such as Katsushige Anryu and the late Masami Asai. Saji-san's mastery in knife-making is particularly evident in his flagship rainbow Damascus line, which features stunning intermittent layers of copper, brass, and nickel.

This line is celebrated not just for its beauty, but also for its functionality. Some knife enthusiasts enhance these already vibrant layers with a coffee etch, which provides even more visual contrast. For those looking for less maintenance, Saji-san's VG10 rainbow Damascus offers an excellent alternative with its non-reactive properties compared to his carbon steel knives.

The 180mm gyuto from this line is highly praised for its versatility in various cutting tasks, without being overwhelmingly long like other gyutos. It's the kind of knife that you find yourself reaching for repeatedly, often preferring it over a 165mm santoku due to its convenience.

This knife is sold without a handle, allowing you to personalize it further. Choose your own handle here.
