Overview

Hand-forged by legendary Echizen master Takeshi Saji, this 210 mm Rainbow Damascus Gyuto pairs a razor-keen Blue #2 (Aogami #2) carbon-steel core with layers of stainless, copper, and brass that shimmer in a literal rainbow. The natural staghorn handle is water-resistant, comfortably contoured, and utterly unique—no two pieces share the same grain or hue. Balanced at the pinch grip and tempered to 62–63 HRC, it’s an heirloom-quality tool that glides through proteins, produce, and herbs with equal grace. 

Common Questions

Q: Is this knife friendly for home cooks as well as pros?
A: Absolutely. The 210 mm length strikes the sweet spot for everyday prep, while the 50/50 edge makes it easy for right- and left-handed users to maintain on a whetstone.

Q: Will the rainbow cladding rust?
A: Only the exposed Blue #2 edge is reactive; the outer stainless/brass/copper layers resist corrosion. Wipe dry after use and an occasional drop of camellia oil will keep patina handsome, not harmful.

Q: How should I care for the staghorn handle?
A: Just hand-wash and dry—staghorn is naturally dense and water-repellent. Avoid soaking.
