Shigeki Tanaka Aogami #2 Damascus Gyuto 180mm
Shigeki Tanaka is a highly skilled, fourth-generation blacksmith working out of his shop located in Miki city. Tanaka-san trained at Takefu knife village in Echizen, Japan. At TKV he quickly absorbed many skills that are on full display with his world renowned knives. All of his knives are hand-forged out of his quaint workshop.
His Damascus knives aren’t all looks either - they’re known for their phenomenal sharpness and edge retention. The core consists of aogami #2 (blue paper steel) with 63-64 HRC, set in 16 layers of carbon Damascus steel and ground very thin.
There are those that just swear by a 180mm gyuto. Something about it having a blade style which is quite versatile in its cutting tasks, yet not being overwhelmingly long like a lot of gyutos can be. What’s more? The beauty of a Shigeki Tanaka knife, even in this medium size, is sure to wow your guests.
