Tokushu Knife is proud to present our own cutlery line. Using a White #2 core clad in stainless steel, these knives promise to offer the extremely sharp edges white steel is often touted for, without the reactivity of traditional iron cladding or monosteel construction methods.

A nakiri will quickly become your go-to vegetable prep knife. The flat surface along the length of the cutting edge means you can say goodbye to accordion cuts. At 175mm, it is marginally longer than most you will find at 165mm. Perhaps not a difference you will notice on the cutting board, but a good excuse to buy a knife in a length you don't have, right?

What an incredible knife!

The reason I got this knife is because I already have the 210mm Gyuto version of the same line and I really like it.

The fit and finish of this knife is pretty good, too. And the handle made of wood is actually quite beautiful.

The OOTB blade is really sharp as well. My guess is that it would have had a sharpening before it was shipped. I'm really thankful for that. The back of the blade is about 2 mm thick. I have been cutting mostly vegetables - carrots, cucumbers, tomatoes, eggplant, peppers, cauliflower, parsley, celery.
The knife just gets the job done with ease. Due to the hammered surface, the food will not stick to the blade. It won't cause much food to separate, but it won't stick to the blade. It can be easily removed by hand.

This knife is a combination of beautiful craftsmanship and great performance. It is highly recommended. If you've used a Tsunehisa knife before, you already have an idea of what to expect.
