Makoto Kurosaki SG2 Bunka 240mm with Custom Prisma Handles
The Makoto Kurosaki SG2 Bunka 240mm is an unusual, statement-making interpretation of the Bunka profile. At 240mm, it has the reach of a full-size gyuto and the distinctive precision of a long K-tip. Many cooks would describe the shape as a kiritsuke-style gyuto, but Makoto Kurosaki calls it a Bunka, and that name reflects his own design intent.
This Tokushu configuration pairs Makoto Kurosaki's SG2 blade with three one-of-a-kind custom handles by Prisma Knife. Each handle changes the visual character of the knife while preserving the same long, agile blade and premium cutting performance.
Why Makoto Calls It a 240mm Bunka
Most Bunka knives fall in the 165mm to 180mm range. Makoto Kurosaki extends the profile to 240mm, creating a knife with substantially more slicing length while retaining the flat edge section and angular K-tip associated with the Bunka shape. It works well for vegetables, herbs, boneless proteins, fish and long slicing cuts, while the fine tip remains useful for detailed work.
SG2 Powder Steel
The core is made from SG2, also known as R2 powder steel. SG2 is valued for excellent edge retention, high hardness, fine carbide structure and strong corrosion resistance. It can take a refined, aggressive edge while requiring less maintenance than reactive carbon steels.
This is not a damascus blade. The visual pattern comes from a carefully applied hammered decorative finish across the upper blade. Below it, a soft kasumi transition leads into a highlighted cladding line and polished cutting bevel. The layered visual effect gives the knife depth without relying on traditional damascus construction.
Hammered Pattern, Kasumi Finish and Highlighted Cladding Line
The upper blade has a patterned hammered texture with an almost fractured or crystalline appearance. The lower section transitions through a soft kasumi finish before meeting the bright cladding line and exposed SG2 cutting core. This combination gives the knife a distinctive look while keeping the blade face clean and highly legible.
Tokushu Signature Prisma Handle Variants
Aurora Prisma: A vivid blend of blue, violet and rose resin with strong movement and contrast. This is the boldest and most colorful of the three options.
Glacier Prisma: Figured wood paired with cool blue resin for a cleaner, more restrained look inspired by ice and water.
Arctic Timber Prisma: Natural wood set against clear resin, creating the appearance of timber suspended beneath glass or ice.
Each custom Prisma handle is installed as part of the Tokushu configuration, turning the same Makoto Kurosaki blade into three clearly different collector-grade variants.
Common Questions
Q: Is this really a Bunka?
A: Makoto Kurosaki calls it a Bunka, although many enthusiasts would classify the 240mm K-tip profile as a kiritsuke-style gyuto. The knife combines traits of both.
Q: Is the blade damascus?
A: No. The visible pattern is a decorative hammered finish. The lower blade has a kasumi treatment and a highlighted cladding line rather than layered damascus steel.
Q: What is SG2 steel best known for?
A: SG2 is known for strong edge retention, refined sharpness and stainless convenience. It is an excellent choice for professional cooks and enthusiasts who want high performance without carbon-steel reactivity.
Q: Which handle should I choose?
A: Choose Aurora for the most dramatic color, Glacier for cool blue tones and figured wood, or Arctic Timber for a more natural, transparent look.
Care and Maintenance
Hand wash and dry immediately after use. Do not place the knife in a dishwasher or use it on bones, frozen food, glass, stone or ceramic boards. A Hasegawa Pro Cutting Board will help protect the fine SG2 edge. Light maintenance on the Tokushu Knife Premium XL Buffalo Leather Strop can extend the time between sharpenings, and our professional sharpening service is available for customers seeking an enhanced out-of-box edge.
