The Makoto Kurosaki SG2 Bunka 240mm is an unusual, statement-making interpretation of the Bunka profile. At 240mm, it has the reach of a full-size gyuto and the distinctive precision of a long K-tip. Many cooks would describe the shape as a kiritsuke-style gyuto, but Makoto Kurosaki calls it a Bunka, and that name reflects his own design intent.
This Tokushu configuration pairs Makoto Kurosaki's SG2 blade with three one-of-a-kind custom handles by Prisma Knife. Each handle changes the visual character of the knife while preserving the same long, agile blade and premium cutting performance.
Why Makoto Calls It a 240mm Bunka
Most Bunka knives fall in the 165mm to 180mm range. Makoto Kurosaki extends the profile to 240mm, creating a knife with substantially more slicing length while retaining the flat edge section and angular K-tip associated with the Bunka shape. It works well for vegetables, herbs, boneless proteins, fish and long slicing cuts, while the fine tip remains useful for detailed work.
SG2 Powder Steel
The core is made from SG2, also known as R2 powder steel. SG2 is valued for excellent edge retention, high hardness, fine carbide structure and strong corrosion resistance. It can take a refined, aggressive edge while requiring less maintenance than reactive carbon steels.
This is not a damascus blade. The visual pattern comes from a carefully applied hammered decorative finish across the upper blade. Below it, a soft kasumi transition leads into a highlighted cladding line and polished cutting bevel. The layered visual effect gives the knife depth without relying on traditional damascus construction.

The upper blade has a patterned hammered texture with an almost fractured or crystalline appearance. The lower section transitions through a soft kasumi finish before meeting the bright cladding line and exposed SG2 cutting core.
