Overview
Meet the Ittetsu Stainless Clad Aogami Super Santoku 180mm (Western Handle)—a compact, do-everything prep knife designed for everyday speed and control. The AS (Aogami Super) core is heat-treated to high hardness for excellent edge retention, then wrapped in stainless cladding for easier care. A polished migaki finish and a comfortable black pakkawood Western handle make it a natural upgrade for home cooks and pros who want laser-like performance without babying a fully carbon blade. Use it as your primary chopper for vegetables, proteins (no bones), herbs, and delicate slicing where a tall, nimble blade shines.
Common Questions
Q: Is this knife stainless?
A: The cladding is stainless for easier maintenance, but the cutting edge is reactive Aogami Super. Dry promptly after use to prevent rust and let a protective patina develop. For long-term care, a light coat of tsubaki (camellia) oil is perfect.
Q: Is it good for home cooks?
A: Absolutely. The 180mm length feels agile on small boards yet tall enough for confident chopping. The Western (yo) handle offers instant familiarity and secure grip—ideal for anyone upgrading from a standard chef’s knife.
Q: How should I maintain the edge?
A: Touch up with a fine stone and finish on a leather strop to keep that razor feel. If you’d like it professionally tuned, our Tokushu Knife Sharpening Service delivers outstanding out-of-box sharpness.
Q: Which cutting board should I use?
A: Use a knife-friendly board to preserve the edge—our go-to is the Hasegawa Pro. Avoid glass, stone, or very hard bamboo.
