Blue (aogami) #2 is the steel used for the cutting core of this knife. A steel with added chromium and tungsten for added toughness. Despite the cladding being carbon, the kurouchi finish helps prevent the quick formation of rust. This line has gorgeous contrast from the polished cutting edge, to a smokey cladding and kurouchi above the shinogi. Easy on the eyes, sharp on the cutting board.

Sure at 270mm, you could probably go with the traditional shaped sujihiki. But that's boring! Spice up your life with a sakimaru slicer instead. Same purpose as the sujihiki (translates to flesh cutting), but with a samurai sword tip (also known as a tanto). These knives are especially popular for when you have guests over.
