Hatsukokoro has recently emerged as an exciting house brand of H&K distributors based out of Amagasaki, Japan. Cooperating with several of today’s foremost blacksmiths and sharpeners ensures there is a wide variety of aesthetics and steel to choose from under the brand’s banner; a little something for everyone. 


Hatsukokoro's Kumokage ("cloud shadow") kitchen knives are manufactured by Muneishi Cutlery mfg in Tosa using Aogami #2/Blue #2 steel. They feature a rustic kurouchi finish and Damascus cladding on the blade road. 
Muneishi Cutlery Mfg. was founded in 1955 in Tosa, Japan. It is currently run by third generation Kosuke Muneishi, who specializes in affordable hand forged cutlery in blue steel. We think these are a steal of a deal!

Each of these knives comes with a gorgeous ebony wa handle installed and ready to use.

Very nice but the edge is too thin

I know I shouldn't do it, but I did. I used it to cut into a frozen begget. The straight edge is kinda wavy now. My other longer knife have better leverage was fine to cut into that frozen begget.
