Hatsukokoro Kujaku V-Toku2 Rainbow Damascus Santoku No Handle

Overview

The Hatsukokoro Kujaku V-Toku2 Rainbow Damascus Santoku delivers eye-catching artistry and serious performance in a compact, do-everything blade. “Kujaku” (孔雀) means peacock—an apt name for the multi-metal rainbow damascus cladding that shimmers across the blade. Underneath the color lies a hard-working V-Toku2 carbon steel core (Takefu Special Steel’s analogue to Blue #2) heat-treated to high hardness for excellent edge retention and a keen, refined edge. This listing is for the blade only (no handle), ready to be fitted with your preferred wa handle—perfect for custom builds or replacing a damaged handle without paying for parts you don’t need.

V-Toku2 adds tungsten and vanadium for fine carbides and tough wear resistance, while the stainless rainbow damascus cladding (with layers that can include copper/brass/steel) helps reduce reactivity on the blade faces. Expect confident food release, a tall heel for knuckle clearance, and a profile tuned for push, pull, and light rocking on meats, veg, and herbs—the “three virtues” a santoku is famous for.

Common Questions

Q: Is this santoku good for home cooks as well as pros?

A: Absolutely. The 180mm santoku format is approachable and versatile: tall enough for board clearance, short enough for tight spaces, and thin enough for clean cuts. If you want one knife to prep meat, fish, and vegetables, this is it.

Q: How should I care for V-Toku2 carbon steel?

A: Wipe dry during use and after washing, and apply a light coat of tsubaki (camellia) oil if storing for a while. To keep the edge zippy between full sharpenings, strop on our Tokushu Knife XL buffalo leather strop, and when you need a pro refresh, use our knife sharpening service. For the board, pair with a Hasegawa Pro cutting board to protect your edge.

Q: What does “No Handle” mean here?

A: You’re purchasing the finished blade with a wa-ready tang, so you can install a custom handle of your choice. It’s ideal for handle upgrades or matching a knife to your hand size and aesthetic. (We can fit a handle for you—just reach out.)

Q: How does this compare to Blue #2?

A: V-Toku2 is Takefu’s “V-steel” analogue to Blue #2 with added tungsten and vanadium, delivering similar hardness and bite with notable wear resistance and fine edge formation. If you like Blue #2’s feel and sharpening, you’ll feel right at home.
