Seasoning Your Carbon Steel Frying Pan
Before first use, wash your pan with hot soapy water and a soft cloth. Then, gradually heat the pan over medium heat until it starts to lightly smoke. Add 2-3 tablespoons of high heat oil, such as grape seed or canola oil, and swirl it around for a minute. Let the pan cool, drain the oil, and wipe the entire pan, inside and out, with a paper towel. Place the pan in a cold oven, then set the oven to 450 degrees and leave it for 2 hours. Turn off the oven and let the pan cool inside. Repeat this process two more times to establish a solid initial seasoning.
Never expose this pan to high heat, and always allow it to cool before cleaning. Avoid immersing a hot pan in water as it could warp and damage the pan. After each use, wash the pan by hand in hot soapy water, using a soft cloth to avoid damaging the pan's seasoning. Once clean, thoroughly dry the pan and apply a thin layer of oil for protection against oxidation.
