Daovua V3 52100 Gyuto 210mm
For those that venture outside of Japanese-made kitchen knives, you need only scour the internet for a few minutes before you eventually come across the brand Dao Vua. Who are they and why have they taken the internet and market by storm? The story of Dao Vua and their kitchen knife price point is really where it begins.
Here is the short and concise version of their humble beginnings, which you can easily find online. Dao Vua knives are handmade in Hanoi, Vietnam by skilled Vietnamese bladesmiths, using high-quality materials. At the price point of these knives, they are seriously impressive from build to sharpness. Though, they may not be for you if you struggle to take care of your knives. Being carbon steel, even with a kurouchi finish, they sharpen easily but also oxidize easily, so care should be taken to maintain a dry knife.
Once again with the third iteration of their knives, "V3", Dao Vua has addressed another issue users have sometimes worried about. If the metal used is from recycled materials, how can the consistency of the final product be assured? The V3 line uses 52100 carbon steel to improve material consistency. It sounds like every time an end product user has a demand, it seems to be met. What else would you like to see from this exciting Vietnamese knife company?
A 210mm gyuto is by far one of our most popular knife styles and lengths. Whether you are a home cook or a busy on-the-line professional chef, there's just something about 210mm that fits the sweet spot for most. Kind of like having a shoe that's half a size larger so when you decide to put on a warmer pair of socks, the shoe still fits seamlessly. To tie it back to knives, what we mean is, 210mm is a very versatile length that belongs in any kitchen!
