Overview
The Anryu Shiro Kuro Damascus Petty 150mm is a compact Japanese utility knife for trimming meat, slicing fruit and preparing smaller vegetables. Its White #2 carbon steel core takes a fine edge and responds readily to sharpening, while the 150mm blade offers more reach than a paring knife without the size of a full-length gyuto.
A dark kurouchi finish meets visible Damascus layers along the bevel, giving each blade its own character. The rounded Rosewood Circle handle has a warm wood grain and a comfortable, simple shape. Made in Echizen, Japan, this knife comes from the Anryu workshop, whose tradition continues under blacksmith Takumi Ikeda.
Common Questions
What is a 150mm petty knife best used for?
Use it for shallots, garlic, herbs, fruit, trimming boneless proteins and other jobs where a chef's knife feels too large. Its pointed tip is useful for controlled detail work, while its length handles small slicing tasks on a cutting board.
Is the Anryu White #2 petty suitable for home cooks?
Yes, if you are comfortable caring for carbon steel. It suits cooks who value a fine edge and enjoy maintaining their knives. Use a gentle slicing or push-cutting motion and avoid bones, frozen food and twisting the edge through hard ingredients.
Will this knife rust, and how should I care for it?
The White #2 core and iron cladding are reactive. A patina is normal, but moisture left on the blade can cause rust. Wipe it during use, hand-wash after cooking and dry it immediately. Never soak it or put it in a dishwasher. For longer storage, apply a light coat of tsubaki knife oil.
Sharpening and Everyday Use
Maintain the edge with a suitable whetstone as needed. Light passes on a Tokushu Knife leather strop can help refresh a clean edge between sharpening sessions. Use a knife-friendly surface such as a Hasegawa cutting board, and avoid glass or stone boards.
