About Anryu Hamono

Anryu Hamono, a small knife-making workshop in Echizen, was established by Hansaburo Anryu in 1873. Fourth-generation knife artisan Katsushige Anryu joined the family business in 1959 and was trained under his father Katsutoshi Anryu. Now, the 5th generation craftsman Takumi Ikeda leads Anryu Hamono, continuing the legacy of creating quality knives.

Aogami #2 (Blue #2) steel, a premium Japanese high carbon steel for knife making, requires careful maintenance due to its non-stainless nature. Always wipe your knife dry after each use. The stainless cladding covers a large part of the blade, easing maintenance while preserving the cutting and sharpening pleasure of the Aogami Super core. Avoid cutting into bones, frozen foods, and hard fruit pits.
