CHANGE COPY The name Katsushige Anryu is synonymous with Takefu Knife Village. He was one of the founding members of this kitchen knife creating focused village, along with other knife legends such as Takeshi Saji and the late Masami Asai.

Old Anryu knives are being chased down since he retired in early 2021, and with it, his kanji engraving. But, if you know anything about the Japanese, it is that they exercise a great amount of discipline and are very serious about their work. Which is why Takumi Ikeda being appointed as the 5th generation smith for Anyru Hamono, means Anryu-san had a great deal of respect and confidence Takumi Ikeda's ability. Ikeda-san's leadership comes with a new kanji present on Anyru knives. The bottom-most kanji of Ikeda-san's engraving looks like a Roman numerical number 5 (v) in between two horizontal lines.

If you've seen an Anryu knife before, you know how distinguishable the dimple hammer (tsuchime) patterns are. Paired with a core of blue (aogami) steel #2 and stainless steel cladding, you end up with an all encompassing attractive package with a core steel which is more rust resistant than blue steel #1 or white steels.
