Overview
The Yoshimi Kato SG-STRIX V-Tsuchime Kiritsuke Sujihiki 270mm is available with a fitted Prisma handle or as a blade-only option for a custom build. Select your configuration before ordering. Each Prisma handle is an individual piece, and the photos show the specific handle offered for that option.
Prisma — Orange / Smoke: Orange wood, smoky translucent resin and a red marbled ferrule with a narrow gold-colored accent. Prisma — Orange / Black & Gold: Orange wood, dark resin with gold-colored flecks and a dark striped ferrule. Both Prisma options include the fitted handle. Blade Only — No Handle: Supplied without a handle; a suitable handle must be fitted before use.
The 270mm blade is designed for long, controlled slicing strokes through boneless meat and fish. Its narrow profile and pointed kiritsuke tip suit portioning steaks, carving roasts and preparing clean fish slices. Rows of V-shaped hammer marks catch the light above the blade's wavy cladding line.
SG-STRIX, also called SPG STRIX, is a stainless powder steel developed by Takefu Special Steel. Takefu designed it to combine high hardness with easier sharpening than conventional high-hardness powder steels. Choose a finished Prisma build for an installed custom handle, or select the blade-only option to plan your own handle fitting.
Common Questions
Will I receive the knife shown in the photos?
For either Prisma option, you will receive the knife with the specific handle pictured for that selected variant. The blade-only option comes without a handle. Check the selected option and its photos before adding it to your cart.
Does the blade-only option include handle installation?
No. A handle and fitting are separate. Browse our custom wa handles and contact Tokushu Knife to confirm compatibility and installation before use.
What is a kiritsuke sujihiki used for?
It is a dedicated slicing knife for boneless meat and fish. The long blade helps you complete a slice in fewer strokes, while the pointed tip is useful for precise starts and trimming. Use a gyuto or another suitable knife for general chopping; this slicer is not intended for bones, frozen food or prying.
How do I care for SG-STRIX and the custom handle?
Hand wash and dry the blade and handle promptly. Stainless steel resists corrosion but still needs care, and the wood-and-resin handle should never be soaked or put in a dishwasher. Use a knife-friendly cutting board and a correctly fitted blade guard for storage. Maintain the edge with whetstones and gentle passes on a Tokushu Knife leather strop when appropriate.

US shipping: Free on orders over $99. Orders are normally fulfilled within 2 business days, and UPS Ground transit is typically 1–5 business days after fulfillment. Custom handle installation or sharpening may add 1–2 business days.
Returns: Eligible purchases may be returned within 180 days with a free prepaid return label. Knives sharpened by Tokushu Knife or fitted with a custom handle remain eligible if they are otherwise new, unused, undamaged, and returned in their original packaging with all included components. The same refund terms apply.
