The Yoshikazu Ikeda Honyaki Sakimaru Sujihiki 300mm is a collector-grade slicer built to work. Forged in Sakai as true honyaki (monosteel) from Shirogami #3, it features a long, slender profile for single, uninterrupted draw-cuts through sashimi blocks, roasts, and cured fish. This piece includes Special Polishing by Mr. Lee of Michun Knife Works, bringing out a vivid, high-contrast hamon so the blade looks as extraordinary as it performs. The robust spine (3.3→3.0→1.0 mm) tapers to a precise tip, while the sakimaru point adds control for detail work and presentation slices.
Maintain like any high-carbon honyaki: wipe during prep, dry immediately, and store with a light protective coat. Pair with a forgiving board and touch up the edge between full sharpenings.

Q: What’s the advantage of a sakimaru sujihiki over a standard sujihiki?
A: You get the same ultra-clean slicing performance with a subtly upturned, yanagiba-inspired tip that improves line control for finishing cuts and decorative work—great for sashimi portioning and fine trimming without switching knives.
