Overview
The Hatsukokoro Kujaku V-Toku2 Rainbow Damascus Petty 150mm (Blade Only) pairs artisan beauty with everyday utility. “Kujaku” means peacock, and this blade earns the name with its etched rainbow Damascus cladding—layers of copper, brass, and stainless that shimmer along the blade road. Underneath, a V-Toku2 carbon-steel core delivers keen sharpness and excellent edge life, comparable to Blue #2 but tuned for high hardness. Ideal for fruit, herbs, garnishes, and precise board work, this 150mm petty arrives without a handle, giving you complete freedom to install your favorite wa handle.
Why chefs love it: thin, responsive grinds; a tip that flies through detail work; and a surface finish that helps resist quick patina formation on the exposed cladding while the carbon core does the cutting. Keep it dry and lightly oiled and it will become your daily scalpel. For maintenance, we recommend our Tsubaki (camellia) oil, a quick strop on our Premium XL Buffalo Leather Strop, and—if you want it screaming sharp out of the gate—our Pro Sharpening Service. Pair it with a Hasegawa Pro cutting board to protect the edge.
Common Questions
Q: Is this petty good for home cooks, or is it just for pros?
A: Both. The 150mm length is friendly for tight spaces and quick prep (shallots, citrus, trimming proteins). It’s nimble like a paring knife but has enough heel and height for small cutting-board tasks—perfect for daily use.
Q: Will the rainbow finish wear off?
A: The etched cladding is part of the layered material itself (copper/brass/stainless), not a painted coating. Normal use and gentle care preserve the look; avoid aggressive scouring pads. Dry after use and apply a drop of tsubaki oil to the core steel to minimize patina.
Q: What is V-Toku2 and how does it perform?
A: V-Toku2 is Takefu’s high-carbon tool steel, engineered for fine edge formation and high hardness (often up to ~64 HRC) with added tungsten and vanadium for wear resistance—think Blue #2 performance with extra bite. It sharpens crisply and holds a refined edge when used on a quality board.
