Overview
The Hado SLD Kiritsuke Gyuto 200mm blends Sakai craftsmanship with a versatile, k-tip profile ideal for precise push cuts, long slices, and tip work. Forged with a semi-stainless SLD core and finished in a food-release friendly nashiji cladding, it delivers excellent edge retention with easier upkeep than reactive carbon steels. The 200mm (7.9”) blade length hits the sweet spot for both home cooks and pros who want speed, control, and board coverage without feeling bulky. Handled in oak with a comfortable octagonal shape, it balances beautifully for a confident pinch grip.
Hado (formerly OUL Sakai) is renowned for wide, even grinds and meticulous finishing from Sakai, Osaka. This kiritsuke-gyuto is double-beveled (50/50) for ambidextrous use and ships with a keen edge that responds quickly to professional sharpening or light maintenance on a strop.
Common Questions
Q: Is this knife suitable for home cooks?
A: Absolutely. The 200mm length is easy to control, the k-tip excels at detail work, and the SLD core gives you long-lasting sharpness with less fuss than reactive carbons—perfect for nightly dinner prep.
Q: Will SLD steel rust?
A: SLD is “stain-resistant,” not fully stainless. Wipe dry after use and avoid long soaks. For extra protection during storage, a thin coat of tsubaki (camellia) oil is great insurance.
Q: How should I maintain the edge?
A: Touch up on a fine stone and finish with a few passes on our Tokushu Buffalo Leather Strop. When the knife needs a full refresh, use our in-house sharpening service for a pro tune-up.
Q: What cutting board do you recommend?
A: A soft, knife-friendly surface preserves sharpness. We love the Hasegawa Pro Cutting Board for daily use.
