The Sanjo Workhorse: Precision Meets Durability
The Tokushu Knife Tsuchime SLD Gyuto 210mm is a definitive "Sanjo Workhorse," engineered for those who demand a knife that can handle the rigors of a professional line while maintaining a refined edge. Forged in Sanjo, Japan, this Gyuto features a robust build and a sophisticated long-tapered wide bevel grind, making it an excellent value for a durable everyday tool.
Designed for Root Vegetables & Heavy Prep
Our professional assessment of this blade highlights its unique geometry. The wide bevel grind and long taper provide incredible food release, allowing the knife to move through dense root vegetables like carrots, potatoes, and squash while helping limit "wedging." This specific grind ensures that despite its sturdy spine, the knife feels nimble and efficient during high-volume prep work.
SLD Semi-Stainless Steel: The Best of Both Worlds
Forged from SLD steel—a Japanese semi-stainless tool steel related to the D2 family—this Gyuto balances edge retention, toughness, and manageable care. With a hardness of 62 HRC, it provides the edge retention of high-carbon steel but with the low-maintenance benefits of a semi-stainless finish. It is tough, resilient, and can hold a sharp edge through extended shifts.
Pro Tip: To maximize out-of-the-box performance, consider adding our professional sharpening service to your order.
Artisan Craftsmanship & Sanjo Heritage
The blade is finished with a Tsuchime (hammered) texture, which reduces surface tension for better food release. It is paired with a premium Walnut Wa-handle, handcrafted by artisans in Sanjo. The handle features the signature Tokushu Knife Kanji, representing the authenticity and local craftsmanship behind every blade we sell.
