The Sanjo walnut handle, accented with a maple stripe is a Tokushu Knife exclusive, paired by our in house artist Leo, ensuring you knife looks as perfect as it cuts. 

This Tsunehisa Gyuto is built with Aogami Super (AS) carbon steel, offering outstanding edge retention and ease of sharpening. AS steel features the highest carbon and chromium content among Blue Paper steels, delivering exceptional hardness with a slight advantage in corrosion resistance. Protected by stainless steel cladding, this blade withstands shocks and is given a striking Nashiji Kurouchi finish for enhanced food release and aesthetics.
