Overview
The Takeshi Saji SG2 Diamond Damascus Santoku pairs a powdered stainless steel core with Saji's distinctive textured Damascus finish. Bright layered lines and the engraved signature give the blade its character, while the compact santoku profile suits everyday vegetable, meat, and fish preparation.
Made in Echizen, Fukui, Japan, this double-bevel blade is designed for controlled chopping, push cuts, and slicing through boneless ingredients. SG2, also commonly sold as R2, offers strong edge retention with the convenience of stainless steel.
Blade only — no handle is included. The exposed tang is intended for a fitted Japanese wa handle. Choose this version for a custom build, and contact Tokushu Knife to confirm handle fit before ordering your handle.
Recommended Medium Handles
Choose a medium wa handle for this blade: Medium Shattered Carbon, Medium Shattered Carbon Gold, Medium Ebony & Light Horn, Medium Cypress & Horn, Medium Amboyna Burl & Horn, or Medium Snakewood. These handle add-ons are sold separately. Each link opens the Medium size. Contact Tokushu Knife to confirm tang fit and arrange fitting before use.
Common Questions
What is a santoku knife best used for?
A santoku is an all-purpose kitchen knife for chopping vegetables and slicing boneless meat or fish. Its broad blade is useful for transferring prepared ingredients, and its relatively flat cutting edge suits controlled push cuts.
Does this Saji santoku include a handle?
No. This listing is for the finished blade and exposed tang only. A compatible handle must be fitted before the knife can be used. Handle selection and fitting are separate.
Is SG2 Diamond Damascus stainless?
Yes. The SG2/R2 core and stainless Damascus cladding resist corrosion, but the blade still needs hand washing and prompt drying. Do not soak it or put it in a dishwasher.
Care and Use
Use a soft sponge and mild detergent, and dry the blade before storing it. Avoid abrasive polishing that can change the Damascus finish. Cut on wood or a knife-friendly surface such as a Hasegawa cutting board. Avoid bones, frozen food, twisting cuts, and scraping the board with the edge. Maintain the edge with waterstones or use our knife sharpening service.
