Overview
The Tetsujin Silver #3 Ukiba Kiritsuke Gyuto 240mm pairs Toru Tamura's forging with Naohito Myojin's precise sharpening. Its Ginsan stainless steel core and stainless cladding offer a practical combination of fine cutting performance and straightforward daily care. The Ukiba finish reveals a flowing cladding line, while the angular kiritsuke tip gives you a precise point for detailed vegetable work.
Choose Rosewood / White Top for the complete knife shown in the photographs, fitted with an octagonal rosewood handle and a contrasting light-colored ferrule. The long cutting edge suits slicing boneless meat, portioning fish and working through larger vegetables. The Blade Only option is supplied without a handle when available.
Common Questions
Is this a single-bevel kiritsuke?
No. This is a double-bevel kiritsuke-style gyuto, suitable for both right- and left-handed cooks. Its pointed profile combines a chef's knife cutting edge with a precise tip.
Does Ginsan steel need special care?
Ginsan is stainless steel, but it still needs sensible knife care. Hand-wash with mild soap, dry thoroughly and store safely. Avoid dishwashers, soaking, bones, frozen food and twisting the edge through dense ingredients.
Is a 240mm gyuto suitable for home cooking?
Yes, if you prefer a longer blade and have enough cutting-board space. It is especially useful for larger produce and longer slicing strokes. A knife-friendly cutting board helps protect the fine edge.
