Overview
The Tetsujin Blue #2 So-Kasumi Kiritsuke Sujihiki 210mm brings a compact slicing profile together with a precise kiritsuke-style tip. Forged by Toru Tamura and sharpened by Naohito Myojin, this Japanese slicer pairs an Aogami #2 carbon steel core with soft iron cladding and a clean kasumi finish. Its narrow blade suits controlled pull cuts through boneless meat and fish, while the pointed tip helps with detailed trimming.
Choose Prisma Handle for the complete knife shown with a custom wood-and-resin wa handle, black ferrule, and red spacer. Choose Blade Only for an unhandled blade ready for a compatible wa handle and professional fitting. The photographed Prisma handle is the actual handle supplied with that option.
Common Questions
Is this a single-bevel kiritsuke?
No. This is a double-bevel sujihiki with a kiritsuke-style tip. It combines a slicing blade with a pointed tip and is suitable for both right- and left-handed use.
What is a 210mm kiritsuke sujihiki good for?
It is a compact option for slicing boneless proteins, portioning smaller cuts, and making controlled trimming cuts. Use smooth slicing strokes on a knife-friendly cutting board. Avoid bones, frozen food, twisting, and prying with the fine tip.
Does the blade-only option include a handle?
No. It includes the unhandled blade. You can explore our Prisma custom wa handles and contact Tokushu Knife about compatibility and fitting before ordering a separate handle.
How do I care for Blue #2 carbon steel?
Both the core steel and iron cladding can develop a patina and can rust if left wet. Hand wash, wipe during use, and dry immediately. Do not soak or put it in the dishwasher. For storage, apply a light coat of tsubaki knife oil.
