Don't forget these...

Can a single knife can end a war. The "bread knife battle" between bakers and knife aficionados is over! Does a proper bread knife have serrations to tear through a hard crust? Or should it be very sharp, making clean slices with minimal damage and crumbs. Why not both? Serrations on the tip of the knife are to break through a proper hard crust fresh out of the oven, but once the crust is broken, and extremely sharp edge is ready to slice through that freshly baked bit of heaven.

Tadafusa is located in Sanjo, Japan, and they make some excellent knives. Their reach travels farther than their name alone, and they work with many famous knife shops to provide them with high quality / value blades.

The apex of bread knives

This thing rocks. I'm surprised at how sharp the non-serrated edge is. Meanwhile, the serrations really do bite through even tough crusts.

The handle is pretty and adds some unique flair to my collection. It *feels* very different in the hand but doesn't interfere with muscle memory or technique.

Amazing for cutting sandwiches without mangling the structure and contents too. I've gotten through some serious sandwiches with a single stroke, no embellishment.

Really an amazing thing.
