The Shibata Koutetsu Chromax Gyuto 240mm is a long, lightweight Japanese chef knife designed for cooks who want laser-thin geometry, extra cutting length, and precise control. Finished by Takayuki Shibata in Fukuyama, Japan, the Koutetsu line is known for exceptionally clean grinds, sharp out-of-box edges, and smooth cutting performance.
The Chromax semi-stainless core takes a keen edge, offers strong edge retention, and sharpens with a responsive feel similar to carbon steel. Stainless cladding makes daily care easier, although the exposed core can still patina and should be washed and dried promptly. The 240mm format provides additional board coverage for slicing proteins, portioning large produce, and professional prep while remaining light and nimble.
An octagonal rosewood wa handle keeps the knife balanced and comfortable in a pinch grip. This is a high-performance knife intended for vegetables, herbs, and boneless proteins; avoid bones, frozen food, hard pits, and twisting cuts.

Chromax is semi-stainless. It resists corrosion better than traditional carbon steel but can still patina or rust if left wet. Hand wash and dry immediately.
