It's really easy, if you want a kitchen knife that is Damascus clad and captures over 350 years of smithing experience, your road ends at Nigara Hamono. A cutlery and tool shop out of Aomori prefecture in Northern Japan, Nigara Hamono not only has the years of experience to back up their products, but is diversified in their crafts also making steel beams for buildings.
Nigara Hamono have many very identifiable lines of knives. From the swirling pattern of the Anmon Kurozome to the very sought after Troll Killers, this line of kasumi polished cutlery is no different. Striking in its simplicity, a kasumi polish oozes with Japanese tradition. The iron cladding appears like a cloud above a polished Blue #2 core steel.
Debas come in all sizes. A rule of thumb, though there is more to it, is get a deba roughly the length of the fish you plan on using it on without the head or tail. At 180mm, some people would even use this length deba for chicken butchery instead of a garasuki. Why? Because despite how thick and heavy it is, it can be an extremely precise and nimble tool in the right hands.
This knife isn’t as much missing a handle as it is presenting an opportunity to put the handle of your dreams on your new knife. We work with multiple custom handle makers who can make you the handle you desire. Choose the knife you want, then pair with the handle of your dreams. You don't need to settle!
